Welcome Back

Hi! I'm baaaack. I know I took a bit of a hiatus without informing anyone and I am sorry that I didn't give you all a heads up. Simply put, Life got in the way. With my kids being remotely taught at home and me working from home I got wrapped up in focusing on myself, which means I wasn't focusing on me at all. I stopped working out, stopped paying attention to what I am eating, and stopped blogging.

In December with the New Year approaching I decided to get back to putting some focus on my health and then my family was hit with Covid. We are now out of quarantine and everyone is doing better. My kids have no symptoms, but my husband and I are still fighting a cough and sniffles. Now that I feel better I can finally get back to working out and meal prepping.

I have discovered that I am lost without meal prepping. If no meal is prepped then I will eat whatever I can quickly grab and eat. Quick grabs typically amount to a lot of processed and packaged foods that are not healthy at all. Luckily even though I haven't been eating the healthiest I still remember some tips for helping me to meal prep and make healthy meals. This week I was able to prep 3 meals for our family within 4 hours and 3 of the 4 hours was the time it took for my chicken to cook in the crock pot.
